Champagne from the 2008 vintage, known for its excellent quality across the region, would be made from traditional Champagne grape varieties such as Chardonnay, Pinot Noir, and Pinot Meunier.

Ours is a family-run business located in the village of Mailly Champagne on the north slopes of La Montagne de Reims. The village is classified as Grand Cru and is renowned for the quality of its Pinot Noir grapes and its Blanc de Noirs champagnes. We’ve been making champagne using grapes from our own vineyards since 1975 which means that we manage every step of the wine making process ourselves, always keeping in mind the principle that good wine starts with good grapes.
Tasting notes
Based on general characteristics of Champagne from that vintage, you might expect to find tasting notes that include a complex array of flavors such as green apple, citrus, brioche, and minerality, with a well-balanced acidity and a rich, structured mouthfeel that has benefitted from extended aging.
Pairing
Such a Champagne would pair splendidly with delicate seafood dishes, including oysters and sushi, where its acidity and effervescence can cut through the richness. It would also complement creamy cheeses or a light chicken dish, where the wine’s complexity and vibrant acidity enhance the flavors of the food.

Champagne
The Champagne region combines specific climate, soil, and topography conditions that form a unique terroir currently used by approx. 15 000 vine-growers and 300 wine houses. The region has 4 sub-regions - Montagne de Reims, Côte des Blancs, Vallée de la Marne, and Côte des Bar. Each provides customers with a different style of sparkling wine. The dominant grapes are Pinot Noir and Pinot Meunier which are mainly used in Montagne de Reims and Vallée de la Marne, while Chardonnay shows excellent results in Côte des Blancs. The region is even more appealing because of the so-called "Growe's Champagne" wines, the production of which is overseen by one family from start to finish - they grow and press grapes, make wine, and bottle it in the territory of one wine house. This gives the wine a true charm, aura, and unique flavor.
